How difficult is a Catholic, Destination Wedding?

Hello. My fiance' and I have decided we want a destination wedding, down south and then we are going to go on a cruise for our honeymoon. We would like to get married in the Catholic church but am wondering how hard the process will be to book a church and get a priest over the phone, being out of state and not ever meeting the priest beforehand. I honestly dont care what the church looks like, so thats not a problem, I just want to find one and book it.
Has anyone here ever done this sort of thing or know someone who has? How easy do you think this will be?

P.S. We already have an annulment for his first and just finished our catholic prep course today.

Getting married in the Catholic church in your own parish isn't easy, let alone getting married in a church outside of your parish. It's not impossible, but it requires even more paperwork and even more notice to make sure all the paperwork has been processed BEFORE the wedding date. When you say down south, do you mean a southern state like Georgia or do you mean Mexico? In either case, your parish priest would have to grant you permission to marry outside his parish and then the priest marrying you at your destination would work with your parish priest to get the necessary extra paperwork done. You could do an Internet search for a list of parishes in the city and state you wish to marry (don't forget you'll also need a marriage license in that state) to find a parish that interests you. Some parishes are strict about marrying couples only within their parish, so you'll have to find a parish that is more liberal. Also, ultimately, it would be your responsibility to make sure that each parish gets the paperwork they need and that you've met all the criteria, which means you will be the middleman coordinating between the two.
